Egg Pie Filling (Philippine Style)

Yield: Filling good for a 9-inch pie pan

Ingredients:
3 eggs
1/2 c sugar
1 can (390 g) condensed milk
1 can (370 ml) evaporated milk


Procedure:
  • In a mixing bowl, combine the sugar and eggs until sugar has dissolved.
  • Add in the condensed milk and evaporated milk.
*To make the egg pie, you will need to make a pastry dough. You can use any pie crust recipe; you can even buy the frozen once. Although just in case you don't have a crust recipe, I would suggest half of the recipe of *pate brisee*. Roll out your dough and line your 9-inch pie pan. Pour your egg pie filling. Egg wash the visible crust, so it will turn out golden once baked. Bake the pie on a 450 F preheated oven for 15 minutes, then lower the temperature down to 350 F and bake for another 15 minutes.
